We invoice you for $5.50/lb based on the hanging weight after we take the animals to butcher
The “hanging weight” is the weight of the beef once it has been harvested and inedible products are removed but before it has been butchered and packaged into individual cuts. This is the best way to charge you for exactly the amount of beef you’ll receive, since animal weights vary from individual to individual.

What beef will you receive?
You will receive a variety of cuts, including Ground Beef, Roasts, T-Bones, Porterhouses, Rib Steaks, and Sirloin.
A quarter beef amounts to roughly 100 lbs of packaged meat. Though each beef animal is an individual, so weights vary!
A quarter beef will receive the standard cut: 1 inch thick bone-in steaks, 2 steaks per package, 1 lb bulk ground beef tubes (no patties), 2.5-3 lb roasts
